Look around the city you want the workshop in, see what its village produced goods are, that should help you make a profit. from what i see in my own game, pravend has a huge abundance of grain in the trade menu but very little beer, so maybe a brewery would get you more profit. no guarantees though. Here's another way to make money in Mount and Blade 2, as long as your stock doesn't get pilfered.
Smithing is still pretty good. Almost too good. Kind of game breaking. A bit of a grind to get to where you're making 30k+ a two handed polearm, but once you're there it makes money irrelevant.
